Slow cooking using a crockpot.

Many of your favorite recipes can be successfully adapted to the crockpot or slow cooker if you follow a few simple rules. You’ll find a basic time/temperature guide for converting recipes, some do’s and don’ts for specific ingredients and a few tips for making your slow cooker dishes more flavorful.

Liquids
Generally, liquids may be decreased in slow cooking – a general rule of thumb is about half the recommended amount. Unless the dish contains rice or pasta, one cup of liquid is usually enough.

Pasta and Rice
When recipes call for cooked pasta to be added, cook it until just slightly tender before adding to the pot. Add 1/4 extra liquid per 1/4 cup uncooked rice, and use long grain converted rice for the best results. For long-cooking recipes, add cooked rice shortly before serving.

Beans
It is usually best to soak beans overnight before cooking them in the crockpot. Before adding sugar or acidic ingredients, the beans should be softened first, either in the slow cooker or on the stove top. If your recipe includes tomatoes, salt, or other acidic ingredients, the beans should be tender before beginning.

Herbs and Spices

Ground herbs and spices tend to dissipate over long cooking times, so it’s best to add them near the end of cooking. Whole herbs release flavors over time, so are a good choice for crockpot cooking. You should taste and adjust seasonings, if necessary, before serving.

Milk/Cheese
Milk, sour cream, and cream break down over long periods of cooking, and should be added during the last hour. Condensed cream soups are good substitutions for milk and can be cooked for extended times. “Healthy,” or reduced fat cream soups can be used in any recipe as a substitute.

Cheeses don’t generally hold up over extended periods of cooking, so should be added near the end of cooking, or use processed cheeses and spreads.

Soups
Add water only to cover ingredients in soup, and add more after cooking if necessary for a thinner soup.
For milk based soups, add 1 or 2 cups of water and during the last hour, stir in milk, evaporated milk, or cream as called for.

Vegetables
Dense vegetables like potatoes, carrots, and other root vegetables should be cut no larger than 1″ thick, and placed in the bottom of the pot, since they take longer to cook

Then you will know why I love cheesecake. <br><br>The first documented cheesecake was at an Olympic game in the seventh century in Greece. It then spread to other European countries and eventually made its way to North America when immigrants crossed the ocean to seek their fame and fortune. Little did they know that the recipe they brought with them would eventually launch a huge following of people who love cheesecake and would balloon into a multimillion-dollar industry across the world. <br><br>The decadent taste and texture of cheesecake belies the fact that it is fairly simple to make. Cheesecake lovers know that they can have this delightful delicacy anytime they want by stirring up a few basic ingredients including cream cheese, sugar and eggs, and then pouring it into a pie shell which can be made of graham cracker crumbs or other conventional pie crusts and baked.  <br><br>So what’s not to love about cheesecake? It can be eaten anytime of the day or night, it’s easy to make and even easier to buy, it tastes divine, and on top of all this, it creates a feeling of well being that only comes from being good to yourself. Beginner’s Winemaking

It’s important to do some homework and learn exactly what’s entailed before undertaking the hobby of winemaking. It is not something that can be simply plunged into and then learned along the way. Without the vital research required to have the necessary foreknowledge of each and every critical winemaking step and process, failure is a certainty. When it comes to winemaking, failure can taste as awful as success is sweet.

Winemaking is a fun hobby that can easily be done in one’s spare time and at the end of the process–provided everything goes well–there will be a glorious result. Many people find winemaking to be an addictive past time, because no matter how well they might do they always envision room for improvement, in the next batch. As more is learned about wine making and as more wine making experience is gained the wine will get better and better. As more and more tips and tricks are learned to help improve the final product, and endless process begins of improving the next batch, and then the next batch, and then the next, and so on.

The vast majority of wines are made from grapes for a very good reason: the grape has nearly all of the ingredients necessary to making wine already infused into it. Success in winemaking entirely wrapped up in the balance of chemicals, and the grape has many of the necessary chemicals in it already, in balanced ideal for winemaking.

The right balance of sugar, tannin, moisture and nutrients, are vital to create a quality wine, and it just so happens that the grape perfectly fits the bill. This natural balance allows the grape to ferment exactly as it needs to for successful winemaking. However, selecting the proper grape is only the beginning of a successful winemaking journey.

There are of course many different grapes that can be used in different combinations. As the hobbyist becomes more skilled at winemaking they may want to try adding a bit of some other fruits to the mixture to give the wine some extra depth and flavoring. Reading about the different grapes that can be used in winemaking and how they affect the outcome of the wine making process can be enormously helpful. Knowing what kind of wine the maker prefers will give them a good idea of which direction to set out in.

As with any hobby it is important to keep close in mind that winemaking is supposed to be fun. Mistakes are bound to be made, and no one takes up winemaking without making a few along the way. Don’t let mistakes destroy the fun of the hobby. Rather, learn from them and seek to correct them.

From Seed To Plate–Easy Organic Growing

Purchasing organic foods is a rapidly growing trend in the U.S. and all signs say that going organic is no passing fad. Today, a majority of Americans (74 percent) purchase organic food and beverages because they believe it is healthier-and safer-for themselves and their families. Recent evidence suggests that organically grown crops contain higher levels of vitamin C, polyphenols (naturally occurring antioxidants) and some minerals. Just as important to many families is the fact that organic fruits and vegetables are never grown with synthetic chemical fertilizers, pesticides or growth regulators. People feel safer without these chemicals in the produce they eat.

Growing your own organic produce has never been easier. In fact, organic growing can be as simple as planting seeds in a pot or two in the backyard or even on your kitchen windowsill. Greek Salad

Ingredients:

4 ounces Mesclun salad greens

1 cucumber; sliced into discs

4 ounces tomatoes; bite- sized pieces

1/2 red onion; thinly sliced

4 ounces pitted Kalamata olives; cut in half

2 ounces Feta cheese; crumbled

Freshly cracked black pepper to taste

Add all the ingredients into a mixing bowl; toss with oil and vinegar or Greek dressing such as Seeds of Change Greek Feta Vinaigrette.

Italian Cuisine: More Than Pasta

Go to any family restaurant with Italian dining in mind and you are likely to order chicken parmesan, pasta alfredo, spaghetti and meatballs, or maybe a pizza. It is easy to think that some pasta, some marinara sauce, a crust of Italian bread and a glass of wine is the beginning and end of Italian cuisine, especially if you grew up in the United States.There is much more than red sauce and starch on the agenda for most Italian regional cuisines, and with all of the various regions and cultures in the boot on the ocean, Italian regional cuisines have as much range as your average New York City block.

There is the tourist region of Tuscany, on the northwestern coast of Italy. Tuscany is sought out for its simple but delicious dishes, seasoned sparingly with basil, parsley, and thyme. Tuscan bread and a little bit of olive oil is a big part of the seafood dishes of the Tuscan region.

Abruzzo, a little known treasure in the middle eastern section of the boot mixes chili peppers into almost all of their dishes. Like many other regions in Italy, there is a mixture of mountain and seafood dishes. Pasta is very often a first course, instead of a part of a stew or entrée. Most of the chefs in the Abruzzo region are skilled at hand rolling their own stuffed pastas, and crepes are used in meat dishes, rolled in savory sauces or put in to broths. Polenta is enjoyed with hearty sausages and rich, meaty sauces.

Sardinia, an island off of the western coast of Italy is home to a rich fishing tradition as well as a beautiful mountainous inland landscape. This, in addition to a rich heritage of not only Italians, but also Arabs, French, Greeks, and Spaniards, has made the island home to a diverse culture of seafood and meat dishes spiced with fennel and saffron. Stews and rich, hearty pastas make up a large part of the local cuisine in Sardinia, as well as sheep milk’s cheese.

Emilia-Romagna is perhaps the most sought out region of Italy in terms of local cuisine. It is often called the market basket of Italy. Located in northern Italy, Emilia-Romagna is home to many of Italy’s most renowned dishes, like Prosciutto di Parma, Mortadella, Parmigiano-Reggiano, and balsamic vinegar. Chefs in the Emilia Romagna region have a penchant for gregarious presentation and rich spices.

Much like the American idea of Chinese food, the American idea of Italian food is only the tip of the iceberg. Italian regional cuisine is marked by the country’s locality to northern Africa and other Mediterranean countries, as well as a diverse local landscape, ranging from mountains to oceans. Sheppards, shopkeepers, farmers, and fisherman all contribute to one of the most diverse cultural cuisines in the world. Next time you are in the mood for Italian food, try something a little bit different than your usual spaghetti and meatballs, maybe a saffron seafood stew or a polenta. Rest assured, you won’t think of the words “Italian cuisine” the same again.

Cooking up Stress and Anxiety

Gone are the days when people think of cooking as a task that should be done “only by women.”  In the past, women were traditionally relied upon to cook the meals for the family, do the dishes and clean the house, and be in-charge of just about every domestic task there is. But times have changed and women now play very different roles in society unlike what women of the previous decades were accustomed to.  This change in gender roles has affected both women and men — especially in terms of taking the  lead kitchen.  Today, both men and women now appreciate the art of cooking.  People with exceptional culinary skills are highly compensated.  For that reason, it is no wonder that the stress that used to part and parcel of cooking is now experienced by both men and women.  Food, after all, is about pleasing the senses of people who partake of one’s kitchen creations.

Cooking and stress are not often associated with each other.  The word “cooking” easily connotes   gustatory pleasures and not stress which is often linked to one’s work at the office or to problems at home.
But it should not be a surprise to know that stress and anxiety now affect the men and women who do the cooking as much as the salesman who tries to meet his daily quotas or the manager who faces enormous organizational challenges.

In restaurants, for example, there are now more male cooks or chefs.  These kitchen experts follow a so-called “chef’s ladder” that defines the rankings and specific tasks of each person in the kitchen. There is the head chef or “Chef de Cuisine” who visualizes the dishes in accordance with the restaurant concept of dining. Next would be the Executive Chef, who actually runs the whole kitchen, manage the costs, hire and fire staff, revamp the menu, do certain administrative tasks. Under them would be the Sous Chef who  make the daily specials, takes inventory, watches over the staff, and does the hands-on work in the kitchen. Also called the “Expediter”, the Sous Chef makes sure that the food gets to the table in a timely manner, a task that requires coordination and time management. With the same level as the sous chef, the pastry chef is in-charge of the pastry section of the restaurant. Mostly women reserved for women, this job requires preparation of chocolates, souffles, and sweet pastries.

Under these chefs would be the line cooks who are the ones who actually cook the food.  The line cooks are divided according to certain cooking specialty.  Another key member of the kitchen is the Chef de Garde Manger who manages the cold food section that includes the salads and desserts.

If you have watched an episode of the t.v. cooking show, Iron chef, you would probably know how stressful it is to work as a chef or a line cook.  In that show, the cameras usually show the stress and anxiety in the chef’s faces as they try to prepare a certain number of meals under time pressure. Anxiety is also seen on the chef’s faces when the judges are tasting their dishes.

In another popular reality-based television show called Hell’s Kitchen, several people enter as contestants in a game that is supposed to select the next “big chef” in town.  Being a reality show, Hell’s Kitchen often shows the stress and anxiety on the faces of the contestants while the host shouts and gets mad at them for not doing certain things right in the kitchen. Anxiety grips each contestant as they try to battle out to win the throne of being the next best chef.

Beginning Wine Tasting

Wine really does deserve some serious attention if you ask me, it’s a lot more than just a drink. It is for this reason that I find it very strange that there is no defined tasting procedure which has a universal acceptance. It is common that the majority of wine tasters follow their own set out plan when tasting and this will vary from person to person. Most of these steps, whilst having their place in the vineyards would be frowned upon at the dining table, they involve a set of steps which to the layperson would appear quite ridiculous. The difference can be akin to that of a persons preference to a particular style or genre of music. The world of critical wine tasting is a comparison between a real standard and the wine in question, drinking wine with a meal is greatly different to this and the wine is undoubtedly intended as an accompaniment to the meal and as a “refreshment”. Although there is no doubting the eccentric activities of a wine taster at a dinner party are perhaps not required it is worth admiring and appreciating the great talent and concentration that goes into the true appreciation of wine. From an outsiders view, these strange and sometimes occult like tastings may seem a little over complicated but with a true desire and ability to focus ones attention it is quickly possible to begin to understand and appreciate wine in a more full sense. For the basics of wine tasting we are undoubtedly in debt to the likes of Clarke and Goulden.

Where possible it is advised that you should rinse your mouth clean before tasting a wine, but obviously in a dinner party setting this is not always possible nor desired. I would however, recommend that the beginner use this method, it clears the palette and allows the wine taster to become more familiar with the basic characteristics of the wine being tasted (if in doubt, borrow from the experts!). A more experienced taster will more quickly be able to get the basic qualities of a wine and will often omit this step. Many consider that rinsing with water in this way detracts from the wine and affects palette because the water alters the sensitivity of the tongue and therefore adds a further complication in the whole process. During a long session of tasting it is quite possible that the mouth can become fatigued and therefore this instance lends itself to a revitalization with water.

Wines are best tasted in tulip shaped glasses, with the exception being sparkling wines which require a fluted glass (the elongated type you often see unused in display cabinets!). These style of glasses enhance the sparkling wines natural effervescence. If you don’t have the correct glasses (or enough if you’re having friends round) you can always loan them from a friend. It is important when comparing wines that each glass is filled to the same level (about a third full is the normal) this allows the taster to hold the glass at a steep angle to allow for a nice observation of the colour and clarity but also allows for a nice vigorous swirl of the wine which in turn releases the aromatics in the wine. At dinner party’s it’s also a useful tool when showing off, but beware there is always someone at the party who knows more about wine than you, so credit your fellow guests with some intelligence!

The Other Side Of Mexican Cooking

High-quality bell peppers, summer squash and cucumbers may not have arrived in the farmer’s markets yet, but they’re crisp, fresh and abundant at the supermarket-and most likely imported from Mexico.

Many people don’t realize that Mexico exports far more than just chiles, avocados, tomatoes, limes and other produce you think of as being in Mexican food. Bell peppers in several colors, summer squash in many varieties, and different varieties of cucumbers are just as commonly available from our warm and sunny neighbor to the south.

Mexico has exported high-quality produce to the U.S. for more than 100 years. All Mexican produce undergoes strict quality and safety assurances before it crosses the U.S. border, so you can know it’s safe and fresh. Plus, it’s healthy: Red, yellow and orange bell peppers are high in beta-carotene and vitamin C. Standard-sized cucumbers are just 39 calories each. And yellow squash and zucchini are an excellent source of magnesium.

Try these vegetables in salads this month, or sliced on sandwiches, or in a stir-fry. You can even use summer squash and red bell peppers in your salsa.

Zucchini & Red Pepper Salsa

2 pounds zucchini (look for small to medium ones)

2 medium red bell peppers, seeded and cut into a small julienne

1/2 cup peeled, seeded and diced cucumber

2 tablespoons finely chopped red onion

2 serrano chiles, seeded and minced

1 tablespoon olive oil

1 tablespoon fresh lime juice

1/2 teaspoon salt, or to taste

2 tablespoons chopped cilantro

Trim and dice zucchini, and place in a medium bowl. Add julienne of red pepper, cucumber, red onion and chiles. Dress with olive oil, lime juice and salt, and toss to incorporate. Gently stir in cilantro and serve with yellow or blue tortilla chips, round slices of jicama, or thin slices of French bread. Makes 8 servings.

Fondue – Non Alcoholic

Do you want to share your love of cheese fondue with your children? Or did you just find out that one of your fondue party guests doesn’t drink alcohol? Well then it’s time to learn how to make non-alcoholic fondue. Non alcoholic fondue is great for kids and other people who for whatever their reason, have an aversion to alcohol. The white wine that provides the unique flavor to fondue can be substituted with apple cider. Apple cider will give you the great taste that you expect from fondue without the alcohol.

The story of how fondue came about goes something like this. People living through long winters in the Swiss Alps had to worry about their food supply. They ate what was on hand. At the end of the cold season, usually all that was left was hard cheeses and wine. So with some experimentation and innovation, those ingredients were combined with crunchy bread to create the first fondue dinners.

So take a lesson from the people of the Swiss Alps and use what you have on hand. Don’t worry about fondue lovers complaining that your fondue has no bite to it. Using apple cider instead of white wine is a completely acceptable solution. It taste great and will add a nice flavor to your fondue. If you use apple cider in your fondue, you will never miss the white wine.

Non-Alcoholic Cheese Fondue

1 cup Apple Cider (to mix with cheese)
1/4 cup Apple Cider (to mix with cornstarch & mustard)
2 teaspoon Lemon Juice
1 tablespoon Onion (finely chopped)
3 cups Cheddar Cheese (shredded)
1 tablespoon Cornstarch
2/3 teaspoon Mustard Powder
White Pepper (to taste)

Heat the cider, lemon juice & onions on medium low heat in your fondue pot

Slowly add the cheese while stirring
Mix cornstarch and mustard in 1/4 cup apple cider
Add mixture to cheese
Add white pepper to taste
Note: if too sweet, add more lemon juice

To Dip:

Crusty Bread cut into bite-sized pieces
Vegetables – Mushrooms, Potatoes, Cauliflower, Broccoli, Bell Peppers, etc.
Pita or Flat Breads

The Art Of Coffee Roasting

Could there be anything better than a hot, fresh brewed cup of coffee? As you open that can of pre-ground Maxwell House Coffee, did you even know that coffee comes in different roasts? Did you know that you can roast your own coffee beans at home? If you think that the aroma of your fresh ground coffee beans can’t be beat, get a home coffee roaster, you’ll be in Java Heaven.

Roasting the coffee beans is what imparts flavor. Similar to the making of a fine wine or a hand rolled cigar, some consider the roasting of coffee beans as an art. Those that describe coffee use some of the same vocabulary they use to describe wine. Depending on the roast level chosen the beans take on different flavor characteristics. The lighter the coffee bean the less flavor it will have, the darker the coffee bean the stronger the flavor it will have.

There are generally four different categories of roast. A light roast (American) , a medium roast (Breakfast), a dark roast (French), and darkest roast (Italian or espresso). Each type of roast imparts a different appearance to the coffee beans.

When a coffee bean is roasted to an American roast the beans will have a very light color to them and they will appear dry. A medium roasted bean, or Breakfast roast will have a rich brown color and will be oily in appearance. A French roasted coffee bean will have a very oily appearance with the beans appearing very dark brown. The darkest roasted beans or Espresso beans will appear black.

Coffee roasting can easily be done in your home. Depending on the roast that you desire you can roast coffee in five to fifteen minutes. Green beans are available online from a number of sellers, as are coffee roasters. Choose different types of green coffees to sample. Drum roasters are very popular for use in the home. It’s best to consider purchasing a roaster as it will give you the most consistent finish to your beans. Some try to roast beans in frying pans, some use hot air popcorn poppers. While each of these techniques will work, as mentioned above they don’t give a consistent finish to all the beans and you will most likely be disappointed in the result.
